Recipe: Cookie Dough Bites

These little bites are the best, you can often see the PUSH Team snacking on these. They are again from the Oh She Glows cookbook and I always make sure I re-stock them for the week. They are a great for on the go and they appeal to both adults and kids, and they are pretty healthy. I always double the recipe. You can buy almond flour already ground, or get blanched almonds and process them into flour. These literally take half an hour from start to finish.


1 1/2 cups gluten-free rolled oats

2 tbsp coconut oil

2 tbsp smooth natural peanut butter (or almond butter, sunflower seed butter)

1/4 cup  pure maple syrup

1 tsp pure vanilla extract

1/2 cup almond meal (store bought or ground in your processor/blender)

1/4 tsp sea salt

2 tbsp dark chocolate, chopped (or Enjoy Life choco chips)



Prepare the almond meal. In a blender or food processor (what I used), blend/process 1/2 cup whole raw almonds until they are a flour like consistency. Set aside.

In a blender or food processor, blend/process  oats until a fine flour forms. I find this can honestly take up to 5 minutes in my processor. Set aside.

In a large mixing bowl, combine oil, peanut butter, maple syrup, and vanilla. Beat with a hand mixer (or with a spatula by hand) until smooth. Add in the almond meal, oat flour and salt. Beat again until well combined. Fold in the chopped dark chocolate.

Roll the dough into small balls (about 1 tbs of dough). Place the finished bites on a baking tray lined with parchment paper.

Freeze bites for 5-10 minutes, or until firm. Store bites in the freezer in an air-tight container or freezer bag for quick access later.

Suggested serving size - 2 balls
